The Professional Meat Cutting and Merchandising (PMCM) program involves an intensive 15 weeks on campus with 90 hours of practicum that will give you the skills to prepare and market a wide variety of meat, poultry and fish items. Classroom theory – including business procedures, food sanitation and trade calculations – are complemented by hands-on training in a fully equipped meat-training lab, in conjunction with the NAIT Retail Meat Store.
